fab in a bag.
well, sort of a bag.
do this.
gather up:
a pound of detailed, deveined shrimp
4 cups of fresh arugula
1 cup of your fave uncooked couscous
1 cup chopped fresh cilantro
2 cloves of garlic
1 chopped tomato
1 cubed hass avocado
1 chopped small red onion
1/2 fresh lime
1/4 cup olive oil
1/4 cup chopped jalapeño (pickled or fresh)
2 18" length pieces of aluminum foil
your fave cooking spray.
your grill.



OK, in a bowl combine 1/2 of your chopped cilantro, chopped or pressed garlic cloves, the olive oil and all your shrimp, stir and let sit.
next, spray the entire inside of your foil, lightly.
put your couscous in a bowl with 2/3 cup water, stir and let sit for a sec.
place 2 cups of arugula at the center of each piece of foil.
OK, now add the water-soaked couscous, evenly divided between two foil sheets, right on top of the arugula.
then, do the same with the shrimp mixture.
finally, fold up your foil, so that no air is getting in.
toss on your grill for a mere 12 minutes.
while your foil bags are grilling
mix:
chopped tomato
cubed avocado
remainder of cilantro
chopped red onion
jalapeño
in a bowl, now, squeeze out every last drop of your lime over this mixture and stir.
by now, 12 min. have likely passed, get your foil bags off the grill.
careful, HOT HOT HOT.
with caution, cut open each foil packet on a plate, it's FIERY HOT inside, seriously be careful.
lastly, scoop on your avocado mixture 'til your heart's content.
DIG THE HELL IN.

  3. krista, it's a must make. sub another protein for shrimp if that helps. i could eat EVERY day and SO BLOODY HEALTHY.
